We investigated the quality characteristics of egg produced from laying hens with non-supplemented diets and diets supple-mented with organic minerals on chitosan oligosaccharide. We are made of organic-minerals on substrate of chitosan oligosaccharide. Organic minerals were mixed normal laying hen diet. Laying hens were fed diet for 45 days containing powdered chi-tosan oligosaccharide-Ca, Zn, Se or normal food-additives. The egg weights, color of egg components, egg shell thickness, eggweights, and albumen high were increased compared to normal food-additive group (p<0.05). But, each effectiveness are dif-ferent from organic-minerals. Overall, organic zinc were more effects compared with other organic-calcium and selenium minerals. But, organic selenium was found the decreased body weight and egg weight. These results were happened because of high-level dosage. These results suggest that organic minerals possesses the potential as supplement of laying hens diets to producefunctional eggs.
